The ingredients for café’s grilled pork tenderloin are
  • 1/2 c. dry sherry
  • Whole pork tenderloin
  • Fresh ginger root, about 1″, peeled & sliced into “matchsticks”
  • 1/4 c. honey
  • Lemon zest from 1 lemon
  • 1 tbsp. whole mustard seed and
  • 1 tsp. each fresh parsley, dill, basil
In a pan, you first have to warm honey, ginger, lemon, zest, sherry, parsley, dill and basil. Then mustard seeds should be added in order to warm the sauce just before serving. The pork tenderloin needs to be grilled until it is cooked. You can add a small amount of sherry sauce if needed. Then remove it from the grill and cut it into one inch medallions. Then grill the meat, till it is cooked. Serve it with warm sherry sauce.
