spaghetti with vegetables
(4 servings)
ingredients:400 gr (14 oz) of spaghetti
400 gr (14 oz) of ripe or tinned tomatoes
2 artichokes
2 courgettes
1 stalk of celery
½ onion
1 small leek
1 bunch of parsley
1 pinch of oregano
Extra virgin olive oil
Chilli pepper
Salt
preparation:
Chop the onion and cook it with ½ cup water and 1 tablespoon oil for about 20 minutes to soften.
Cut the vegetables into thin slices and add to the onion with the chopped parsley. Add the chilli pepper, season , and cook for 10 minutes.
Add the chopped tomatoes and oregano, cook for 30 minutes and at the end of cooking, add 4 tablespoons of olive oil.
Meanwhile in a pot with salted water cook the spaghetti, drain, add to the sauce and cook everything for 1 minute.
If you wish, sprinkle with grated Parmesan cheese.
